It’s been awhile since we’ve been able to connect here in person at the Mill District. We’d like to invite you to an exclusive opportunity to join us for a cooking class and conversation with our friends and great personalities: Ted King and Matthew Accarrino.

Join us for 45 minutes on July 29th at 4pm PST/7pm EST. Matthew will teach us how to make a one of kind waffle mix with whipped raspberry maple butter that is ideal for pre-ride fueling. Then, he’ll walk us through a version of maple ginger Icebox pie. Both recipes are inspired by the UnTapped maple man himself, Ted King.

Matthew Accarrino is the nationally recognized executive chef of SPQR in San Francisco. Born in the Midwest and raised on the East Coast, he moved west to California in 2007. He had originally hoped to become a professional cyclist until a leg injury turned his passion for cooking into a career. Matthew’s unique culinary style draws inspiration from his Italian heritage, personal experience, and classical training with some of America’s best chefs. In the kitchen Matthew, takes full advantage of the bounty of opportunities California ingredients present. This includes a strong belief in direct sourcing, producing, and at times playing a role in the creation of his ingredients. The result is an intensely personal cuisine that is both technically polished and soulful; and which has garnered critical praise. Under his direction, the restaurant has been awarded a Michelin star for eight consecutive years. He has been nominated five consecutive times for the prestigious James Beard Foundation Award for “Best Chef: West.” Food & Wine Magazine named him “Best New Chef” in 2014. Matthew co-authored and released his first book, published by Ten Speed Press – SPQR: Modern Italian Food and Wine – in October 2012. When he’s not cooking Matthew enjoys riding and racing his bike. He also works with Professional Racing Teams and is the Chef Consultant for The Tour of Utah.

Ted King raced at the highest level of the UCI Pro Tour for a decade. The Tour de France, Giro d’Italia, Paris-Roubaix, the World Championships, name a road race and Ted’s likely done it. He retired to Marin in 2016 where he met @laura, spent two years dipping his toe into the ambassador role of cycling, they married and moved easy to Vermont where he co-owns UnTapped maple-based sports nutrition. The King of Gravel was the 2019 Gravel Rider of the Year.
