Affectionately named QOMcakes, this recipe highlights how to make my favorite pre-ride, pre-race, pre-any day pancakes. A simple recipe, with a few special additions that make these cakes moist, dense, and packed with the right balance of carbs, fat and protein to provide sustained energy.

Customize them any way you like and make sure to share with friends. I’ve made these pancakes for dozens of cyclists, who pass through our house, and they have all adopted the recipe and use on the daily. Use the extras to create ride food sandwiches – my favorite is cream cheese + raspberry jam.
